Weeknight Spicy Thai Basil Stir-fry

4 garlic cloves, peeled

2 birds’ eye chillies

2 large mild red chillies, roughly chopped

4 tbsp oyster sauce

2 tbsp fish sauce

1 tsp sugar

2 tbsp vegetable oil

500g (1 lb) mince meat (e.g. beef, pork, chicken or turkey mince)

2 large zucchinis, cut into bite-sized chunks

1 cup basil leaves (e.g. Italian basil or Thai basil or a mix of both)

  • Use a mortar and pestle to pound the garlic and chillies to a rough paste.
  • To make the stir-fry sauce, mix together the oyster sauce, fish sauce and sugar.
  • Heat the oil in wok or large frying pan over high heat. Add the paste and cook for half a minute. Then add the mince meat and stir-fry for 3-4 minutes or until just cooked. Add the zucchini and the stir-fry sauce. Stir-fry for another 1-2 minutes. Toss through the basil. Remove from heat and serve with the rice.
