What’s the deal with layering ingredients?

Putting liquids in first, then flours and seeds and finally salt and yeast keeps the yeast from activating too soon. It gives you a reliable rise every time because the dry ingredients don’t collapse into the liquid before the cycle starts.

Special Ingredient Notes

Flax seeds and chia seeds swell as they absorb liquid, helping bind the crumb and boost protein and fibre.

Sunflower seeds and pumpkin seeds add a nutty crunch and extra healthy fats.

Ingredients

255 ml warm water (40-43 °C)

40 g honey

30 ml olive oil

185 g wholemeal flour

140 g strong bread flour

20 g dry milk powder

60 g rolled oats

30 g flax seeds

30 g sunflower seeds

20 g chia seeds

30 g pumpkin seeds

6 g active dry yeast

7 g salt

Prepare the Pan

Prepare the breadmaker pan by ensuring the baking pan and kneading blade of your

Panasonic SD-PN100

are clean and securely in place.

Combine Wet Ingredients

In

a small bowl

whisk the warm water, honey and olive oil until just combined. Pour the mixture into the breadmaker pan.

Layer Dry Ingredients

Layer the dry ingredients over the liquids in this order: wholemeal flour, bread flour, dry milk powder, rolled oats, flax seeds, sunflower seeds, chia seeds and pumpkin seeds.

Add Salt and Yeast

Add the salt on one side of the pan and the yeast on the opposite side, keeping them apart.

Select Programme and Start:

Close the lid and select the ‘Whole wheat’ programme with a medium crust setting. Press Start. Total cycle time is about 4 hours.

Check Dough Consistency

After 10 minutes of kneading open the lid briefly to check the dough. If it looks too dry, add 1 tablespoon of water; if too wet, sprinkle 1 teaspoon of flour. Close the lid quickly.

Remove and Cool the Loaf

When the baking cycle finishes use oven mitts to remove the pan. Eject the kneading blade and slide the loaf onto a wire rack. Let it rest for at least 15 minutes so the crumb can set.

Serve

Slice the loaf with a serrated knife into thick pieces. Toast to bring out the nutty seeds or enjoy plain with a smear of butter.

Storage Tips

Wrap cooled slices in clingfilm or store in an airtight container at room temperature for up to three days. Freeze individual slices in a zip-lock bag for up to one month.
