
Let everyone fill their own tacos with melt-in-your-mouth pork belly and easy as toppings. Full of vibrancy and va-va-voom.
1 x Marion’s Kitchen Thai Red Curry Meal Kit , which includes:
– THAI RED CURRY PASTE
– COCONUT MILK
– DRIED THAI HERBS & CHILLI
– BAMBOO SHOOTS
1kg (2 lb 3 oz) pork belly, skin removed
16 flour or corn tortillas
iceberg lettuce, shredded, to serve
6 tomatoes, diced, to serve
½ small red onion, finely sliced, to serve
¼ cup roughly chopped coriander (cilantro) leaves, to serve
lime wedges, to serve
- Preheat oven to 160°C (320°F). Place the THAI RED CURRY PASTE, COCONUT MILK, DRIED THAI HERBS & CHILLI and BAMBOO SHOOTS in a bowl. Whisk until well combined.
- Place pork belly in a casserole dish and pour over red curry mixture. Cover tightly with foil and roast for 2 hours or until pork is soft and tender. Remove the foil and roast for a further 1 hour or until charry and golden. Remove pork from dish and use a knife or fork to slice the pork. Place in a large bowl and pour over the sauce and bamboo shoots remaining in the casserole dish.
- When you’re almost ready to serve, heat tortillas following packet instructions.
- Serve this dish family-style so everyone can help themselves. Construct a taco by placing a slice of pork on a warm tortilla, then top with shredded lettuce, chopped tomato, onion slices and coriander leaves. Squeeze over some lime juice.
