
This dinner comes together in a crazy-fast 10-minutes… and you’d better believe it’s packed full of flavour, too! Raid your pantry and turn boring tinned tuna into something truly fabulous: a vibrant salad bursting with Thai goodness.
Spicy Thai-style Tuna Salad
375g (13 oz) drained weight of canned tuna
3 small Asian shallots (or ½ small red onion), sliced
3 tbsp lime juice
3 tbsp fish sauce
2 tsp sugar
2 tsp chilli powder (or to taste)
¼ cup finely sliced coriander (cilantro)
2 spring onions (scallions), finely sliced
½ cup mint leaves
lettuce leaves, to serve
sliced cucumber, to serve
- In a large bowl, mix the tuna, shallots, lime juice, fish sauce, sugar and chilli powder.
- Toss through the coriander, spring onion and mint. Taste and add more fish sauce, lime juice or chilli powder to taste.
- Serve with lettuce and cucumber.
