Think juicy, crispy-edged beef patties smashed to perfection, melty cheddar cheese, and a spicy burger sauce that packs a punch with Marion’s Kitchen Coconut Sriracha and crispy chilli oil. Add your favourite toppings and tuck it all into a toasted brioche bun for a burger that’s smoky, creamy, spicy, and seriously addictive. Perfect for BBQ nights, easy dinners, or when you’re just craving a big, bold bite.
For the burgers:
450g (1 lb) ground beef (80/20 fat ratio recommended)
Salt and freshly ground black pepper
1 tbsp Marion’s Kitchen Crispy Chilli Oil (chunky bits only)
4 slices cheddar cheese
1 white onion, finely sliced
1 tomato, thinly sliced
Iceberg or cos lettuce
Pickles, to taste
4 brioche burger buns
For the burger sauce:
½ cup mayonnaise
⅓ cup Marion’s Kitchen Coconut Sriracha Sauce
1 tbsp yellow mustard
1 dill pickle, grated
½ tbsp pickle juice
2 tbsp Marion’s Kitchen Crispy Chilli Oil (with bits)
⅛ tsp ground black pepper
- In a small bowl , mix together the mayonnaise, coconut sriracha sauce, mustard, grated pickle, pickle juice, crispy chilli oil, and black pepper. Set aside.
- In a bowl, gently mix the ground beef with 1 tablespoon of the chunky bits from crispy chilli oil, season generously with salt and pepper. Divide the mixture into 4 equal portions and shape into loose balls.
- Heat a cast-iron or heavy-based pan over high heat until smoking hot. Add the beef balls, on top with onion and smash each one flat with a spatula or burger press. Cook for about 2 minutes or until you get those crispy edges. Flip, add a slice of cheese to each patty, and cook for another minute until the cheese is melted.
- While the patties cook, toast your brioche buns cut-side down in the pan until golden.
- Spread a generous amount of burger sauce on the buns. Stack on the lettuce, tomato, pickles, and that cheesy smashed patty. Add more sauce on top if you like it extra saucy (we highly recommend it).
- Serve immediately with crispy fries (optional)
