Spicy Carbonara Ramen Noodles - 6

Spicy Carbonara Ramen Noodles

100g (3.5 oz) bacon, sliced into 1 cm batons

1 small onion, finely diced

4 garlic cloves, finely chopped

25g (about 1 oz) butter

3 tbsp gochujang

1 tbsp soy sauce

⅛ tsp ground black pepper

2 packets Buldak Carbonara instant noodles*

600ml (20 fl. oz) unsweetened soy milk

1 cup frozen corn kernels

2 cups grated mozzarella cheese

2 tbsp finely chopped parsley

¼ cup finely sliced spring onion (scallions)

½ tsp black sesame seeds

1 fresh red chilli, finely chopped (optional)

  • Start by turning on the rice cooker and selecting the ‘STEAM’ mode to preheat the pot for 1 minute. Once the pot is warm, add the bacon, onion, garlic and butter. Close the lid and reselect the ‘STEAM’ function for 5 minutes, allowing the bacon to render its fat and the onions to soften.
  • In the meantime, in a small bowl, mix together the gochujang, soy sauce, black pepper, and the seasoning and sauce packets from the instant noodles.
  • Open the rice cooker lid and stir through the unsweetened soy milk and the gochujang mixture.
  • Next, add the instant noodles, corn, mozzarella cheese and chopped parsley to the rice-cooker pot. Close the lid and cook for another 5 minutes, or until the noodles are cooked and the cheese has melted into the sauce.
  • Divide among serving plates and sprinkle with spring onion, red chilli and black sesame seeds.
