
The showstopper sauce you need this holiday season: this plum sauce is sweet, sticky and has hidden depths of flavour. The ideal partner to crispy roast pork, if you ask me!
Spiced Plum Sauce
500g (17 oz) plums in juice
1 cup sugar
½ cup white vinegar
1½ tbsp fish sauce
1 cinnamon stick
2 whole star anise.
- Separate the plums and the juice. Carefully slice the plums in half and remove the stone from the centre .
- Place ½ cup of the plum juice in a saucepan over high heat. Add the sugar, vinegar, fish sauce, cinnamon stick and star anise. Simmer for 4-5 minutes or until the sugar dissolves and the syrup has thickened slightly.
- Pour the sauce into a bowl and allow to cool. Just before serving, pour the sauce over the plums and serve.
