
Sink your claws into juicy and sweet grilled crab, barbecued to perfection and then coated in a lip-smacking black pepper sauce. Nothing quite says ‘summer’ like it.
Singapore-style Grilled Black Pepper Crab
4 blue swimmer crabs , cleaned and cut into pieces
2 tbsp vegetable oil
6 garlic cloves, finely chopped
1 tbsp finely chopped ginger
¼ cup oyster sauce
¼ cup soy sauce
1 tbsp sugar
¼ cup chicken stock
2 tbsp freshly ground black pepper
50g (1.7 oz) butter
4 spring onions , finely sliced
- Grill the crab pieces over charcoal or regular barbecue (alternatively cook under a hot oven grill).
- To make the sauce, heat the oil in a saucepan over medium heat. Add the garlic and ginger and cook for half a minute. Then add the oyster sauce, soy sauce, sugar and stock. Simmer for 10 minutes. Then stir through the pepper and butter.
- Pour the sauce over the grilled crab and scatter over the spring onions.
