
This Salted Miso Caramel is an irresistible combination of sweet, salty, and umami flavours. The rich caramel sauce, enhanced by the earthy taste of miso, pairs perfectly with creamy vanilla ice cream. It’s an indulgent, unique treat that’s easy to make in under 20 minutes—ideal for when you’re craving something a little different!

½ cup white sugar
½ cup thickened (heavy) cream
1 tbsp white (shiro) miso
Vanilla ice cream, to serve
- In a small saucepan , combine the sugar and 2 tablespoons of water over low heat. Stir until the sugar has dissolved, then let it simmer for 6-8 minutes, or until the mixture turns a deep golden colour.
- Remove the saucepan from the heat and carefully add the cream (be cautious, as the mixture will splutter). Return the saucepan to the heat and whisk in the miso paste until fully combined.
- Allow the caramel to cool for about 15 minutes, so it thickens slightly.
- Scoop the vanilla ice cream into serving bowls and drizzle generously with the salted miso caramel. Enjoy!
