Microwave Spicy Asian Shakshuka
3 eschallots, finely chopped
4 garlic cloves, finely chopped
3 tbsp extra virgin olive oil
1 tsp sea salt
1 tbsp smoked paprika
½ tsp ground cumin
½ tsp ground cardamom
½ tsp ground black pepper
1 tbsp Thai red curry paste
500g good-quality canned diced tomatoes
100g feta cheese
6 eggs
2 finely sliced Thai birds’ eye chillies (optional)
2 tbsp finely sliced parsley

- Start by placing the finely chopped eschallots, garlic, and olive oil into the base of a large rectangular baking dish (size recommendation: 30cm x 20cm). Cover the dish with baking paper and microwave on high for 5 minutes using the Panasonic Microwave NN-SF57QSQPQ . Be careful when removing the dish from the microwave, as it will be hot. Remove the baking paper.
- Next, stir in the smoked paprika, ground cumin, cardamom, black pepper, and Thai red curry paste, ensuring everything is evenly coated. Then, pour in the diced tomatoes and stir to combine. Cover the dish again with baking paper and return to the microwave to cook on high for another 5 minutes.
- Once the tomato mixture has cooked, carefully remove the dish from the microwave and uncover it. Sprinkle half of the feta cheese over the tomato mixture. Gently crack the eggs into the sauce, spacing them out as evenly as possible. Cover with baking paper once more and microwave on high for 5-8 minutes, or until the eggs are cooked to your liking.
- To finish, sprinkle the remaining feta cheese over the dish, along with the finely sliced chillies (if using) and parsley. Serve immediately with buttered toast on the side for dipping.
