
These Microwave Satay Chicken Noodles are an easy, delicious way to enjoy a flavourful meal in no time. Using the Panasonic 3-in-1 Black Convection Microwave Oven NN-CT56MBQPQ, the chicken is cooked to perfection while the satay sauce delivers a creamy, nutty taste. Serve it with rice vermicelli noodles, fresh cucumber, and herbs for a complete meal that’s quick enough for a weeknight but tasty enough for any occasion.

Microwave Satay Chicken Noodles
500g chicken thigh fillets, cut into roughly 3cm cubes
4 garlic cloves, finely chopped
1 teaspoon ground turmeric
1 ½ teaspoons sea salt
1 tablespoon vegetable oil
180g rice vermicelli noodles
Half a cucumber, thinly sliced, to serve
1 red chilli, thinly sliced, to serve (optional)
Coriander and/or Thai basil leaves, to serve (optional)
Satay sauce: 4 tablespoons peanut butter (crunchy or smooth)
1 tablespoon Marion’s Kitchen Thai Red Curry Paste {link to product page}
200ml coconut cream
3 teaspoons fish sauce
3 teaspoons sugar
4 tablespoons water
- To begin, prepare the chicken by placing the chicken thigh cubes, chopped garlic, ground turmeric, sea salt, and vegetable oil into a bowl. Mix everything together until the chicken is evenly coated. Set the bowl aside while you prepare the satay sauce.
- For the satay sauce, place the peanut butter, Thai red curry paste, coconut cream, fish sauce, sugar, and water into a microwave-safe bowl. Whisk the ingredients well to help dissolve the peanut butter and curry paste, although it’s fine if the mixture remains slightly lumpy at this stage as it will melt together when heated. Place the bowl in the microwave, uncovered, and cook on high (1000W) for 2 minutes. Carefully remove the bowl from the microwave and stir the sauce thoroughly. Allow it to rest at room temperature while you cook the noodles and chicken, as the sauce will thicken as it cools.
- To cook the noodles, place the rice vermicelli in a large bowl and cover them with water. Microwave on high (1000W) for 10 minutes or until the noodles are tender. Once cooked, drain the noodles and rinse them under tap water until cool. Drain again thoroughly and divide the noodles among the serving bowls.
- Next, spread the marinated chicken pieces out onto a dinner plate that fits inside your microwave. Place the plate on top of the elevated wire rack in the microwave. Cook using the grill+microwave combination mode at 440W for 12 minutes, or until the chicken is cooked through and golden.
- To assemble, divide the warm chicken among the noodle bowls. Spoon the satay sauce generously over the chicken and noodles. Top with cucumber slices, red chilli, and fresh herbs such as coriander and/or Thai basil, if desired. Serve immediately for a flavour-packed, comforting meal.
