1 x Marion’s Kitchen Red Curry Meal Kit

– THAI RED CURRY PASTE

– COCONUT MILK

– DRIED HERBS & CHILLI

– BAMBOO SHOOTS

200g spaghetti

2 tablespoons vegetable oil

600g peeled and deveined prawns

4 garlic cloves, finely chopped

Finely grated parmesan cheese, to serve

Marion’s Kitchen Crispy Chilli Oil, to serve

Finely chopped coriander, to serve

  • Drain the bamboo shoots from the meal kit , then chop and set aside.
  • Bring a large pot of salted water to the boil and cook the spaghetti according to packet instructions. Reserve ½ cup of the pasta cooking water, then drain and set aside.
  • While the pasta is cooking, heat the oil in a large frying pan over medium-high heat. Add the garlic and sauté for 30 seconds or until fragrant.
  • Add the prawns and stir-fry for 2 to 3 minutes or until they are just cooked through.
  • Add the red curry paste from the meal kit . Stir-fry for 1 minute to release the aromas. Add the coconut milk and the bamboo shoots, along with the herbs and spices from the kit. Simmer for 2 to 3 minutes.
  • Add in the cooked spaghetti. Toss everything together, adding a splash of pasta water if needed to loosen the sauce. Cook for another minute until everything is well coated and heated through.
  • Serve the pasta in bowls , topped with grated parmesan, a drizzle of crispy chilli oil and chopped coriander.
