What is Gochujang and Gochugaru?
Gochujang is a Korean red chilli paste—it’s savoury, sweet, and spicy all at once. Gochugaru is a Korean red pepper powder, adding a mild, smoky heat. You can usually find gochujang in the Asian aisle of most supermarkets but you may need to search out the gochugaru at your Asian grocery store or online. They’re pantry staples in my kitchen because they instantly add so much depth and a little spice to any dish!
What You Need
beef mince
sweet potatoes
avocado
olive oil
sea salt
black pepper
soy sauce
chilli flakes
cottage cheese
fresh coriander or parsley
toasted sesame seeds
fresh coriander (optional)
honey
gochujang
Steps
Preheat the oven to 200°C (400°F). Toss the cubed sweet potatoes with 1 tablespoon of the olive oil, sea salt, and black pepper, then spread them on a lined baking tray. Roast for 20-25 minutes until golden and caramelized.
Heat
a large frying pan
over medium-high heat. Add the remaining tablespoon of oil and the beef mince. Use a spatula to break it up as it cooks. Once it’s starting to brown, stir in the gochujang. Pour in the soy sauce, then stir well. Let the mixture simmer and cook for another 3 minutes until everything is well combined and glossy. Remove from heat.
In
a small saucepan
over low heat, warm the honey and chilli flakes for 1-2 minutes or until the honey bubbles and froths. Remove from heat and allow to cool for a minute or so.
Divide the roasted sweet potatoes, beef mixture, cottage cheese and avocado between
serving bowls
. Drizzle generously with the hot honey and sprinkle over the sesame seeds. Add coriander if you like. Enjoy!

Ingredients
500g beef mince

1 avocado, diced

Hot honey:
⅓ cup honey
1 tsp Korea gochugaru chilli flakes
