Steps

Place the honey and chilli oil into

a small saucepan

over medium heat. Allow the mixture to bubble gently, then simmer for about a minute or until the flavours are combined and the honey has loosened. Set aside.

Heat a flat grill, toasted sandwich press or panini grill. Lay the haloumi slices inside and press down gently. Cook for 3-4 minutes until the cheese is deeply golden and caramelised on the outside but still soft inside.

Layer each haloumi slice with a handful of rocket, a slice of tomato and a freshly fried egg. Drizzle generously with the hot honey, then wrap and serve immediately while the cheese is still warm and gooey.

4 (about 1cm thick) slices of haloumi

100g rocket

4 slices of tomato

4 fried eggs

Hot Honey

½ cup honey

2 tbsp

crispy chilli oil

(or to taste)

Marion’s Tips

Swap the rocket for baby spinach or even shredded iceberg lettuce if you prefer a milder bite.

If you like more heat, add an extra spoonful of chilli crisp to the honey or even drizzle some straight on top.

These wraps are great in pita bread, flatbreads or even tucked inside a warm tortilla.
