2 tbsp vegetable oil

1 onion, diced

4 garlic cloves, roughly chopped

2 eggs, lightly whisked

3 cups cooked Jasmine rice*

2 tbsp Chinese soy sauce

3 spring onions (scallions), finely sliced

  • Heat 2 tablespoons of the vegetable oil in a wok or large frying pan over high heat. Add the onion and garlic and stir-fry for half a minute or until just softened.
