These bite-size pieces of yumminess are great for lunch boxes or weekend breakfast. The best part is they are ready to eat hot in around 20 minutes, or at room temperature later.

Chilli, Ham & Egg Cups

2 tbsp sesame oil

12 large, thin slices of ham

12 eggs

sweet chilli, sriracha or your favourite chilli sauce

½ cup finely sliced spring onions (scallions), plus extra to serve

1 cup grated cheese

  • Preheat your oven to 180°C/356°F.
  • Brush a 6-hole muffin pan with sesame oil
  • Line each muffin hole with ham. Spoon a teaspoon or more of chilli sauce into the ham cups. Crack an egg into each ham cup. Top with spring onions and the cheese.
  • Bake for about 15 minutes or until the whites are just set. Loosen the edges of each bundle with a knife and pull out the ham cups. Serve warm or cold.
