Vegetable waffles? It’s a thing! If you’re wondering how to get kids to eat vegetables, wonder no more – this waffle recipe is JUST what you need. Smothered in a chocolate sauce, they’re a total treat – plus only take 15 minutes to make.

150g (5 oz) green zucchini, grated

½ tsp sea salt

100g (3.5 oz) spinach leaves, chopped

2 whole eggs, beaten

½ cup self-raising flour

½ cup oat milk

icing sugar (confectioners’ sugar), to dust

Chocolate sauce

100g (3.5 oz) dark chocolate

1 tbsp maple syrup, plus extra to drizzle

  • Preheat waffle iron to around 160C/320F. For the chocolate sauce, place chocolate and maple syrup into a microwave safe bowl. Microwave for 30 seconds. Check, then repeat for a further 30 seconds until it becomes glossy and runny. Give everything a good mix, then set aside until waffles are ready.
  • Place a colander into a large bowl, then line with a cheesecloth, large piece of muslin or a teatowel. Now add the grated zucchini on top of the cloth. Sprinkle over some salt and allow to sit for 2 minutes to draw some of the water out.
  • Fold up the cheese cloth and give the zucchini a good squeeze to remove as much excess water as possible.
  • In another large clean mixing bowl, place flour, zucchini, spinach, eggs and oat milk. Mix together all of the ingredients until just combined.
  • Using a ⅓ cup measure, scoop waffle mix onto waffle maker hot plate. Close the lid of the waffle machine and cook for 5-7 minutes or until crispy and golden brown. Once cooked, remove and transfer to a serving plate. Spoon over some chocolate sauce, drizzle some extra maple syrup and dust a sprinkling of icing sugar. Now tuck in!
  • Notes: – Don’t have a waffle maker at home? No worries! This mix also works great as pancakes.
