
Zhuzh up your weeknight dinner offering with these budget-friendly but big-on-flavour lettuce cups. A new household classic, coming at you!
Beef Bulgogi Lettuce Cups
2 tbsp finely grated pear
3 garlic cloves, finely grated
2 tbsp brown sugar
¼ cup soy sauce
1 tbsp sesame oil
2 tbsp sesame seeds, plus extra to serve
¼ cup finely sliced spring onion, plus extra to serve
500g (1 lb) beef mince
1 tbsp vegetable oil
kimchi, to serve
finely sliced cabbage, to serve
mint leaves, to serve
lettuce leaves, to serve
- In a large bowl, add the pear, garlic, brown sugar, soy sauce, sesame oil, sesame seeds and spring onion in a large bowl. Whisk until combined. Add the beef and mix until well combined.
- Heat the vegetable oil in a wok or large frying pan over high heat. Add the beef mixture and spread it out in the pan. Allow to sear for 4-5 minutes or until a deep brown crust forms . Flip the beef over in chunks. Sear for another minute before breaking the chunks up with a spatula. Stir-fry for another minute or until cooked through. Transfer the beef to a large plate and sprinkle with a little extra spring onion and sesame seeds.
- Serve with the kimchi, cabbage and mint…using the lettuce leaves as little cups.
