5-Minute Microwave Poached Eggs & Crispy Bacon
Three strips of bacon,
one egg,
buttered toast (to serve),
and half an avocado (to serve).
- To begin, place the strips of bacon on the outer rim of a dinner plate lined with 3-4 layers of paper towel. Arrange the bacon pieces in a triangular shape, ensuring they are evenly spaced around the plate. This method allows the bacon to cook more evenly than if it is stacked in the centre of the plate. Once arranged, cover the bacon with an overturned plate to prevent splattering. Microwave the bacon on medium (600W) for 4 minutes. Once cooked, keep the bacon covered to stay warm while you prepare the egg.
- For the poached egg, fill a microwave-safe mug with ½ cup of water. Crack the egg into a small bowl first to ensure no shell fragments. Then, tilt the mug slightly and carefully slide the egg into the water, allowing it to settle at the bottom. If the egg is not fully submerged, top up with a little more water. Cover the mug with a small plate.
- Microwave the mug on high (1000W) for 30 seconds. After the first interval, remove the plate to allow some heat to escape. Then, replace the plate and microwave for an additional 30 seconds for a runny yolk, or adjust the cooking time according to your preference.
- Once the egg is ready, assemble your plate by placing the bacon, buttered toast, and avocado slices. Using a spoon, gently scoop the poached egg out of the mug, draining as much water as possible. Place the egg onto the toast and serve immediately for a delicious, quick breakfast.
